Snacktastic

I’m sure you’ll be hard-pressed to find someone who doesn’t enjoy a good snack. While Cuties, Snoopy fruit snacks and Pepperidge Farm flavor blasted goldfish are some of my favorites, there is a new snack on the block that’s just as delicious.

VitaTop muffin tops from the Vitalicious brand. With only 100 calories, a variety of flavors (deep chocolate is the best), plus vitamins, minerals and fiber, this is my new go-to snack. Vitalicious also makes VitaBrownies, VitaCakes and VitaSandwiches, all of which I’m dying to try.

Simply keep frozen until ready to eat.

A lovely view

This morning I walked a dog whose owners live in a wonderfully modern home with a view of this from their kitchen. Jealous much?

As I stood looking out the window with their goofy dog, I wondered what it would take to get a view like that of my own. I know this particular couple works like crazy, but they’ve managed to build a wonderful home with an even lovelier dog.

Views of my own I can only hope to wake up to someday. It’s funny how water can have such a calming and peaceful effect.

A natural craving

Usually pasta is one of my all-time favorite foods. I can eat it hot, I can eat it cold. I can eat noodles with just butter, noodles with spinach, garlic and shrimp, and spaghetti and meatballs. I could eat at the fanciest Italian restaurant or be happy with Noodles & Company or Kraft Macaroni & Cheese. I really don’t discriminate.

Recently, I turned to the Buitoni brand (thanks to my mom) and I made their spinach cheese tortellini with vodka sauce. Not only was the tortellini done in minutes, but for a store-bought brand they were absolutely delicious. Now I’m dying to try their tomato herb Parmesan sauce, all natural pesto with basil and chicken and prosciutto tortelloni.

Cook.

Mix.

Serve.

Preparing for take-off

Weekend delights

I was lucky enough to have my mom come up to Madison for a visit on Saturday. She stayed the weekend and we had the ultimate girl’s weekend, complete with yummy treats, shopping, a sad movie and pedicures.

Our treats for the weekend (a sort of random assortment, but delicious nonetheless):
Green River. A bright green, lime-flavored soft drink that originated in Chicago in 1919. It’s kind of a mix between Mountain Dew, Mello Yello and yummy lime flavors. Back in the ’60s this fountain drink was available in some drugstore fountains. Total throwback.

Enchiladas. Tortillas rolled around a delicious cheese filling and covered with a spicy(ish) chili pepper sauce. Enough said.
Pre-cooked, before the cheese became all gooey and melty.

Mini brownies. We were all about these little brownies last month; so good we had to have a repeat session. Store-bought, but totally worth it.

The movie that will make you cry no matter what, whether you’re a dog lover or not:
Hachi: A Dog’s Tale. With Richard Gere and the cutest little Akita–a Japanese breed of dog–you’ve ever seen, this movie is a can’t-miss. Tissues? Mandatory.

Spa pedicures, including a paraffin treatment:
If you’ve never been to Envy Nails on University Avenue (halfway between Hilldale Mall and Campus Drive), you’re missing out. Good service, awesome massage chairs and OPI. My color of choice? OPI Coney Island Cotton Candy.
